Dynamite lumpia is a staple appetizer for any party. Made with meat filling and chili peppers, they’re crunchy, crispy, and slightly spice — the perfect match for beer!
This lumpia is the spicy version of the popular Filipino deep-fried egg rolls. What makes dynamite unique is its stuffing of long green chili. The idea is similar to chile relleno, except the stuffed chili peppers are wrapped in lumpia paper and deep fried until crispy and brown.
Dynamite lumpia is the perfect appetizer and it goes well with cold beverages. It can also be enjoyed as the main dish with a cup (or more!) of steamed rice. You’ll be asking for extra cups of rice to balance the spiciness of the dynamite.
How to Make Dynamite Lumpia
The dynamite lumpia recipe is simple, which makes it an ideal dish for sudden-gatherings. All you have to do is prepare each ingredient sequentially for the most delicious dynamite lumpia.
The Pork
The first part of the dynamite lumpia is the meat filling, which requires cooking the ground pork. Heat oil in the pan and sauté the onion and garlic until the latter is brown. If you want a more garlic flavor, cook it first before the onion, allowing the latter to brown a bit without burning the onion. Continue sautéing until the onion is softens. This gives the dynamite its mild and sweet flavor.
Next, add the ground pork and cook it thoroughly. Continue sautéing until the pork turns medium brown, which may take around five to seven minutes. Season with ground black pepper and salt.
Once the pork is cooked, let it cool down. In the meantime, beat a piece of egg and pour it over the cooked pork to bind the pork.
The Chili
Next, prepare your chili. Slice it lengthwise on one side to remove the seeds. Once the pepper is free from seeds, stuff it with cheese. The cheese must be sliced in the same shape of the pepper so that it can easily fit.
Also, while a cheese overload sounds delicious, refrain from overstuffing your pepper with cheese. Leave some room for the meat. Once you stuff the chilies with cheese, add the cooked meat mixture. Add enough meat.
Wrap the stuffed chili in lumpia wrapper and deep fry until golden brown. No need to worry about the stuffing because the meat is already pre-cooked. As for the cheese, it will melt as you fry your lumpia.
How to Serve and Store
Serve dynamite lumpia as party food or an appetizer with ketchup, sweet and sour sauce, ranch dressing or your choice of dipping sauce. Also, if you’re not serving them immediately, place them on a wire rack in a 200 F oven until they are ready to serve.
To store them, freeze them. Freeze uncooked lumpia by wrapping them with cling wrap or laying them on a parchment-lined baking sheet.

- Refrain from overfilling the peppers to keep them from breaking apart.
- Buy the largest peppers you can for easier stuffing and cooking.
- Avoid overcrowding the pan. If you fry in batches, bring the oil temperature back to 350 F.
